BAKED POTATO SKINS 
8 lg. potatoes, baked and cooled slightly
2 tbsp. butter, melted
1/2 lb. bacon, fried, drained, and crumbled
6 green onions, minced
1/2 c. grated Cheddar cheese

Preheat oven to 450 degrees. Cut potatoes in half lengthwise; cut each half into thirds. Scoop out potatoes, leaving skin in tact. Reserve pulp for another use. Sprinkle skins evenly with butter, bacon, and onions. Top with cheese; bake for 15 minutes or until crisp.
