GREEN CHILE RICE 
1/4 c. butter
1 c. chopped onions
4 c. cooked rice
2 c. sour cream
1 c. cottage cheese
1 lg. bay leaf, crushed
1/2 tsp. salt
1/8 tsp. pepper
1-3 sm. cans chilies, chopped (depending on how hot you like) or fresh green chili peppers
2 c. grated cheddar cheese
Chopped parsley

Saute onions in butter until clear. Mix in with rice, sour cream, cottage cheese and seasonings. In a baking dish layer rice mixture, chilies, then cheddar cheese. Can layer twice, topping with cheese then parsley. Bake at 375 degrees for 25 minutes.
