HUMMINGBIRD CAKE 
3 c. self-rising flour
1 tsp. cinnamon
2 c. chopped bananas
1 1/2 c. cooking oil
1 8 oz. crushed pineapple, undrained
2 c. sugar
1 c. pecans
3 eggs
1 1/2 tsp. vanilla

Combine dry ingredients, add eggs and oil, stir until moistened (do not beat). Stir in vanilla, pineapple and pecans. Add bananas. Spoon into greased, floured cake pan (3 layers).

Bake at 350°F for 25 to 30 minutes.

Cream Cheese Filling:

1 8 oz. pkg. cream cheese
1 box confectioners sugar
1 tsp. vanilla
1 stick butter, room temperature
1 c. pecans

Mix all the ingredients together. Spread over each layer after cooling.
