PINEAPPLE UPSIDE DOWN CAKE 
1 stick butter
1 c. brown sugar
1 can sliced pineapple in juice
1 c. sifted flour
1 c. sugar
1 tsp. baking powder
2 tbsp. whole pecans
3 eggs
1/8 tsp. salt
5 tbsp. pineapple juice
Few maraschino cherries

Melt butter in large baking dish. Spread brown sugar evenly and arrange pineapple slices on top. Fill in spaces with pecans and cherries. Sift flour, baking powder, and salt together. Beat eggs, adding sugar gradually. Add pineapple juice and flour mixture. Pour batter over pineapples. Bake at 375 degrees for 30-35 minutes. Turn upside down on platter.
