PINEAPPLE UPSIDE DOWN CAKE 
1/2 c. butter
1 c. brown sugar
1 (No. 2) can sliced pineapple
Cherries, pecans
1 c. self-rising sifted flour
3 eggs, separated
1 c. sugar
5 tbsp. pineapple juice

Melt butter in 10 inch iron skillet. Add brown sugar and stir until sugar and butter are dissolved. Place pineapple, nuts and cherries on top of mixture. Beat egg yolks until light. Add sugar and pineapple juice. Add the sifted flour. Beat egg whites until fluffy and fold these into sugar, pineapple juice and flour. Pour all this over the pineapple. Bake at 375 degrees for 35 minutes.
