QUICK PINEAPPLE UPSIDE DOWN CAKE 
2 c. brown sugar
1 c. butter
20 slices pineapple
20 maraschino cherries
8 c. prepared (thick) pancake batter
1 c. sugar

Melt butter in large (broiler type) pan. Sprinkle brown sugar evenly. Place drained pineapple slices with cherry in center. Pour "thick" pancake mixture over; sprinkle sugar on top.

Bake at 350 degrees for 30 minutes. Cool slightly. Serve with whipped cream or ice cream.
