YELLOW DELIGHT CAKE | |
1 box yellow cake mix (your favorite) eggs, oil, etc. (as directed on package) PINEAPPLE LAYER: 1 (20 oz.) can crushed pineapple, well drained CREAM CHEESE PUDDING LAYER: 1 1/2 cups milk, divided 1 (8 oz.) pkg. cream cheese, softened 1 (3 oz.) pkg. instant vanilla pudding WHIPPED TOPPING LAYER: 1 (12 oz.) tub Cool Whip OPTIONAL GARNISH: coconut flakes crushed nuts Bake cake according to directions on package - use a 9x13-inch pan. Let cool. Spread well drained pineapple over the cake. In a small bowl, add 1/4 cup of milk to softened cream cheese and mix at medium speed until smooth. Add and mix well the remaining 1 1/4 cups of milk and pudding mix. Mix for two minutes and spread over pineapple on cake. Refrigerate at least 30 minutes. Spread Cool Whip on pudding mixture and refrigerate again. Garnish with crushed or chopped nuts or coconut, if desired. Easter Variation: Color the coconut flakes with green food coloring (before sprinkling) and decorate top with Easter (pastel colored) jelly beans. Submitted by: Ann Cruz |
