MONDAY MEAT PIE 
Pastry for double crust pie
1 lb. ground beef
1/8 c. shortening
3 tbsp. instant minced onion
1 1/2 c. tomato juice
1 lb. can mixed vegetables, drained
1 tsp. salt
1/4 tsp. pepper
3 drops hot Tabasco
1/4 c. flour
1/2 c. ketchup

Brown ground beef and onion in shortening; drain well. Stir in 1 cup of tomato juice, mixed vegetables, salt, pepper, and Tabasco sauce. Cover and simmer for 10 minutes. Blend 1/2 cup tomato juice, flour, and ketchup. Add to meat mixture, stirring constantly, until thick. Place in 9 inch pastry lined pie tin. Place other crust on top. Fold under bottom crust, pressing to seal. Flute edge. Bake at 400 degrees for 25 minutes until brown.
