ONION MEAT PIE 
3 c. onion rings (1 large onions)
1 lb. ground beef
3/4 c. dry bread crumbs
1 egg
1/4 c. catsup
1 tbsp. chopped parsley
1 clove garlic, minced
1 tsp. salt
1/8 tsp. pepper
3/4 c. sliced fresh mushrooms
2 tbsp. butter
1/4 c. grated Parmesan

Peel and slice onion into 1/4 inch thick slices. Separate into rings. Combine beef, bread crumbs, egg, catsup, parsley, salt and pepper. Mix gently and pat into 9 inch pie plate. Bake at 350 degrees for 20 minutes. Meanwhile, saute onion rings and mushrooms in butter until limp (not browned). Remove meat from oven and drain off excess fat. Sprinkle meat with Parmesan cheese, reserving 1 tablespoons. Spoon onions and mushrooms into meat shell. Sprinkle with remaining cheese. Return to oven and continue baking 15 more minutes. Cut into wedges and serve.
