ITALIAN ZUCCHINI BAKE 
3-4 lbs. zucchini, sliced
2 onions, sliced or chopped
1 lg. can tomatoes, undrained
1 can mushrooms, drained
3 tbsp. Italian seasoning
12 oz. Mozzarella cheese, grated
1 c. croutons

Cook the first 5 ingredients until the zucchini is tender. Drain juice and layer in large casserole or 9 x 13 pan. (Vegetables, cheese, croutons, and repeat.) Bake covered at 350 degrees for 30-40 minutes until bubbly.
