BAKED STUFFED ZUCCHINI | |
4 med. zucchini 2/3 c. Bisquick baking mix 1/2 c. shredded Swiss, Cheddar or mozzarella cheese 1/3 c. mayonnaise 1 egg 2 tbsp. chopped onion 1/4 tsp. Italian seasoning 1/4 tsp. salt 1/8 tsp. pepper Heat oven to 450 degrees. Place zucchini in enough boiling water to cover. Return to boiling; reduce heat. Simmer uncovered 5 minutes; drain and cool. Cut each zucchini lengthwise into halves. Scoop out centers; chop and drain. Mix chopped zucchini and the remaining ingredients. Fill zucchini. Place in rectangular baking dish, 12 x 7 1/2 x 2 inches. Bake until filling is puffy and golden brown, about 20 minutes. |
