BAKED, STUFFED FISH 
2 c. dry bread crumbs
1/4 tsp. pepper
1 tsp. chopped parsley
2 tsp. chopped onion
1 1/2 tbsp. lemon juice
1/2 tsp. salt
1/2 c. melted butter
2 tbsp. chopped sweet pickle (I use pickle relish)

Mix dry ingredients and add melted butter and lemon juice. Pimentos may be chopped and added to the stuffing. Stuff fish and place in oblong pan. Place bacon slices over the top of the fish. Bake at 350 degrees for 15 minutes to each pound of fish.

You can use frozen fish fillets. Thaw and place on toweling to absorb all the moisture. Then place some fillets on the bottom. Put stuffing in between and place more fillets over the top. Cover with bacon and bake.
