VEGETABLE CASSEROLE 
4 med. potatoes, peeled, thinly sliced
2 med. onions, peeled, thinly sliced
4 sm. yellow squash, unpeeled, thinly sliced (can be mixed with zucchini)
1/4 lb. stick butter, cut in pats
Salt and pepper to taste
1 c. grated Parmesan cheese
1 c. sour cream

Layer half the potatoes, onions and squash in a buttered, shallow pan, dotting each layer with butter and sprinkle with salt and pepper. Repeat layers. Cover tightly and bake in a 350 degree oven about 1 hour and 45 minutes.

Mix Parmesan cheese and sour cream and spread over top. Broil 6 to 8 inches from high heat until partly browned, about 3 to 5 minutes.
