VEGETABLE CASSEROLE 
6 med. zucchini, thinly sliced
4 yellow squash, thinly sliced
2 onions, thinly sliced
10 mushrooms, thinly sliced
4 carrots, thinly sliced

Stir-fry above ingredients in olive oil.

Lawry's seasoning salt to taste
Pepper to taste
1/4 c. chopped fresh parsley
1/4 lb. grated Swiss cheese
1/2 lb. grated Parmesan cheese

Layer vegetables in casserole in order given with Lawry's seasoning salt, pepper, chopped fresh parsley, Swiss cheese and Parmesan cheese between each layer. Top with slices of tomato (3 or 4). Bake at 350 degrees for 30 minutes. Just before serving, brown under broiler if desired. Serves 8 to 10.
