VEAL & PEPPERS 
1 1/2 lb. boneless lean veal
3 tbsp. olive oil
2 green peppers, cut in eighths
1 can (3 oz.) sliced mushrooms
2 cans (8 oz. each) tomato sauce
Salt & pepper

Cut veal into bite-size pieces. Heat oil in skillet over medium heat. Add veal and brown on all sides. Add green peppers, cover and lower heat. Simmer 10 minutes, stirring occasionally. Add mushrooms and liquid and tomato sauce. Simmer, covered, for 30 minutes or until veal is tender. Season to taste with salt and pepper. Makes 4 servings.
