“LEISHA'S BBQ CASSEROLE” IS IN:

LEISHA'S BBQ CASSEROLE 
Great served with corn bread!

1 lb. ground beef
1 (12-16 oz.) pkg. pasta (any kind)
1 1/2 cups uncooked rice
1 large onion, diced
1 large jalapeno pepper or bell pepper, chopped (optional)
2 (15 oz. ea.) cans pinto, black, or kidney beans, drained (any other will also do)
1 (15 oz.) can diced tomatoes, drained (Hunts)
1 tbsp. Worcestershire sauce
1 tsp. garlic powder
salt and pepper, to taste
2 cups BBQ sauce (your favorite)
shredded cheese (any kind; I like Pepper Jack or Mexican "fiesta" style)

Cook rice. Meanwhile cook pasta according to directions. Drain pasta and place in large mixing bowl. Add cooked rice to bowl.

Brown ground beef, onions and peppers. Add to rice and pasta. Add beans, tomatoes, Worcestershire sauce, garlic, salt and pepper, and barbecue sauce. Stir well and pour into a greased casserole dish. Top with desired amount of shredded cheese.

Cover and bake at 350°F for 45 minutes.

Serves 6.
