CHICKEN WILD RICE SALAD 
1 c. wild rice
2 c. water

Bring to boil. Cover and simmer 35-40 minutes. Drain. 1/2 c. thin diced celery 1/4 c. toasted pine nuts or almonds 1/3 c. chopped parsley 1/4 c. thin sliced green onions 1 tsp. tarragon spice

Make night before. Combine and toss with Vinegrette dressing "except" chicken. Add chicken 2 hours before serving. Can add peas, frozen, optional.

VINEGRETTE DRESSING:

1/2 c. olive oil
3 tbsp. wine vinegar or raspberry
1 1/2 tsp. Dijon mustard
1/2 tsp. mustard
1 tsp. salt
