FRUITY CHICKEN RICE SALAD | |
1/3 c. red wine vinegar 2 tbsp. honey 1 tbsp. oil 1 tsp. sugar 1/2 tsp. salt 1 1/4 c. water 1/2 c. diced carrots 1 1/2 c. instant rice (brown) 1/2 c. raisins 2 c. cooked diced chicken 1 c. red or green seedless grapes (or both) 2 tbsp. chopped toasted almonds 1 tbsp. chopped parsley Mix vinegar, honey, oil, sugar and salt in small bowl; set aside. Bring water, carrots and raisins to boil in medium saucepan. Stir in rice. Return to boil. Cover, reduce heat and simmer 5 minutes. Remove from heat and stir. Cover and let stand 5 minutes. Stir in remaining ingredients. Add honey dressing and toss. Refrigerate at least 1 hour. |
