FRUITY CHICKEN SALAD 
1 can (8 1/2 oz.) crushed pineapple
2 c. cooked chicken, cut up
1 c. chopped celery
1 c. diced, unpared apples
1/4 c. diced, canned peaches
1/2 c. dairy sour cream or plain yogurt
1/2 tsp. grated lemon rind
1/2 tsp. salt
1 banana, diced
1/2 c. chopped walnuts
Lettuce

Drain pineapple, reserving 1 tablespoon juice. Combine pineapple, chicken, celery, apples and peaches. Chill well.

Just before serving, combine sour cream, reserved pineapple juice, lemon rind and salt. Pour over fruits. Add banana and walnuts. Toss gently. Serve on lettuce leaves. Makes 4 to 6 servings.
