TWO BEAN AND RICE SALAD 
3 c. cold cooked rice
1 (15 oz.) can pinto beans, rinsed and drained
1 (15 oz.) can black beans, rinsed and drained
1 (10 oz.) pkg. frozen peas
1 c. sliced celery
1 med. red onion, chopped
2 (4 oz.) cans diced green chiles, drained
1/4 c. snipped cilantro or parsley
1 recipe Garlic Dressing or 3/4 c. Italian dressing

Mix all ingredients; add dressing. Stir and marinate 24 hours.

DRESSING:

1/3 c. white wine vinegar (tarragon)
1/4 c. olive oil
2 tbsp. water
3/4 tsp. salt
1/2 tsp. garlic powder
1/2 tsp. pepper

Cover and shake well.
