TOSTADA SALAD | |
1 lb. ground beef 1 (14 oz.) can red kidney beans, drained 1/4 tsp. salt 1 head lettuce, cut into sm. pieces 1 onion, chopped 4 oz. Cheddar cheese, shredded 1 c. Thousand Island dressing 1 pkg. taco seasoning mix 1 (6 1/4 oz.) pkg. tortilla chips 1 lg. avocado, sliced 4 tomatoes, cut into sm. wedges Brown ground beef and onions in a skillet; add beans, taco seasoning mix and salt; cover and simmer for 10 minutes. Before combining rest of ingredients, reserve some tomato wedges, avocado slices and tortilla chips for use as garnish. Combine all remaining ingredients in a large mixing bowl; add ground beef mixture and toss all together lightly. Place salad into a serving bowl and garnish top and sides with the remaining tomato wedges, avocado slices and tortilla chips. |
