SWEET POTATO SOUFFLE | |
2 c. mashed sweet potatoes, fresh or canned 1/2 stick butter, melted 1/4 tsp. salt 1 c. sugar 2 eggs 1/4 c. milk 1/2 c. coconut Mash sweet potatoes until free from lumps. Mix rest of ingredients and add sweet potatoes. Pour in Pyrex baking dish (13 x 9 x 2 inches). TOPPING: 1 sm. can crushed pineapple 1/2 stick butter, melted 1 egg 1/4 c. flour 1/2 c. sugar Mix topping in blender and pour over sweet potatoes. Bake at 350 degrees for 35 minutes. |
