FRUIT JUICE JELLY 
4 c. unsweetened apple, grape, orange or pineapple juice or cranberry juice cocktail (not low calorie)
1 (1 3/4 oz.) pkg. powdered fruit pectin
1/4 c. lemon juice
4 1/2 c. sugar

In an 8 to 10 quart kettle combine juice, pectin and lemon juice. Bring to a full rolling boil (a boil that cannot be stirred down). Stir in sugar. Return to a full rolling boil. Boil hard for 1 minute; stir constantly. Remove from heat; quickly skim off foam with a metal spoon. Ladle into hot, sterilized jars; leave a 1/4" headspace. Seal; using metal lids or paraffin. Makes 6 half pints.
