FRUIT JUICE JELLY 
4 c. unsweetened grape, apple, orange or pineapple juice or cranberry juice
cocktail (not low-calorie)
1/4 c. lemon juice
1 3/4 oz. pkg. powdered fruit pectin
4 1/2 c. sugar

In an 8 to 10-quart kettle combine the desired fruit juice, lemon juice and pectin. Bring the mixture to a full rolling boil (a boil that cannot be stirred down). Stir in the sugar. Return to a full rolling boil. Boil hard for 1 minute, stirring constantly. Remove from heat; immediately skim off foam with a metal spoon. Ladle into hot, sterilized jars leaving a 1/4-inch head space. Seal using metal lids or paraffin. Makes 6 half-pints.
