SUMMER SQUASH CASSEROLE 
4 summer squash
1/2 c. water
Salt
2 eggs, scrambled
1/2 c. cheese
Bread crumbs

Bring water and salt to a boil. Cook squash for 5 minutes. Make white sauce and combine with eggs after white sauce has thickened. Place cooked squash, sauce and eggs in a 1 1/2-quart greased pan. Sprinkle cheese and bread crumbs on top and bake at 350 degrees for 25-30 minutes.

WHITE SAUCE:

2 tbsp. flour
2 tbsp. butter
Salt
1 c. milk

Mix flour, butter and salt. Pour in milk and heat until thickened.
