SPLIT PEA SOUP 
1 pkg. (1 lb.) green split peas
4 qt. water
1 ham bone
1 c. sliced celery & leaves
1 lg. onion diced
1/2 c. sliced carrots
Salt

Heat peas and water to boiling, boil 2 minutes and turn off heat. Let stand 1 hour.

Saute vegetables with pieces of ham and fat from ham bone.

Add vegetables and meat to soup, heat to boiling, reduce heat and simmer about 2 to 3 hours until peas are soft. Remove bone, trim meat from bone, season. Serve piping hot.
