SPLIT PEA SOUP 
1 pkg. dry split peas
1 lb. ham, diced
4 celery stalks, sliced
4 carrots, sliced
2 potatoes, diced
Salt & pepper

Cover peas with cold water and soak overnight. Drain, wash and put in soup pot with water to cover about 2 inches over peas and bring to boil. Add ham, celery and salt and pepper. Turn heat down to low for two hours, stirring as needed. Add carrots, cook 1/2 hour, add potatoes and cook for about one hour. Serve and enjoy.
