SPLIT PEA SOUP 
1 pkg. split peas (washed)
Ham
2 carrots, grated
1 stalk celery (chopped)
1/4 c. onion (chopped)
1 lg. potato (diced)
Salt and pepper to taste

Cook until the peas are tender. It will be a thin soup unless it's cooled overnight and then reheated. It thickens as it cools. Some people like it immediately, some like the warmed over. Both are really good. Instead of ham, you can use canned luncheon meat, bacon, or soup bones.
