SAUSAGE UPSIDE DOWN CORNBREAD 
1 lb. sausage
1 c. chopped onions
1/3 c. chopped green peppers
2 tbsp. flour
1 (6 oz.) can tomato paste
1 tsp. salt
1 tsp. chili powder
1/8 tsp. black pepper
4 oz. cheddar cheese
1/2 c. olives
2 pkg. corn muffin mix (8 1/2 oz. each)

Preheat over to 400 degrees.

Cook sausage, onion and pepper in a skillet until brown. Stir in flour. Mix in next four ingredients. Remove from heat; stir in cheese and olives. Spread evenly into two square Pyrex dishes. Prepare muffin mix according to directions. Spread over sausage. Bake 30 to 35 minutes. Let stand in pan five minutes. Loosen edges. Invert into plate. Serve while hot.
