FRESH CORN PUDDING 
2 1/2 c. fresh corn
2 tbsp. flour
1 tsp. salt
Dash of cayenne pepper
1/4 tsp. mace or nutmeg
1 1/2 tbsp. sugar
1/4 c. butter
2 tbsp. minced green pepper
2 eggs, slightly beaten
1 1/4 c. milk

Combine fresh corn and pulp with flour and seasonings. Saute pepper lightly in butter. Add to corn with eggs and milk. Pour into buttered casserole and bake at 350 for 30 to 40 minutes or until firm. Casserole may be placed in pan of hot water to bake.
