FRESH CORN PUDDING 
2 c. fresh cut corn
3 eggs, lightly beaten
Pinch salt
1/2-3/4 c. sugar
1 can evaporated milk
1 stick butter, cut in pieces
2 1/2 tsp. vanilla
1 tbsp. plain flour (opt.)
Dash nutmeg (opt.)

Rinse can with water, enough to make 2 cups +.

Using fresh cut off corn, combine all ingredients in order given. In a large casserole dish that has been greased with some of the butter pieces, pour in mixture. Bake at 325 degrees for 45 minutes to 1 hour or until lightly browned. Stir 1 or 2 times while still thin and not set.
