RICOTTA SFINGI 
1 lb. ricotta
1 c. flour
3 tbsp. sugar
2 tsp. vanilla
1 tsp. baking powder
1/2 tsp. salt
2 eggs
Oil for frying

Combine dry ingredients. In a bowl combine ricotta and eggs, beating very well. Add flour mix and beat well again. Form into balls. Deep fry in hot oil. When brown, drain on paper. Sprinkle with sugar and cinnamon or confectioners' sugar.

NOTE: Deep frying balls oil might spatter or foam over. Be careful!
