RICOTTA STUFFED CHICKEN BREAST 
2 lbs. ricotta
1 to 2 cloves garlic, crushed
Pitted black olives, chopped
Parsley, chopped
Chicken breasts
Tomato sauce
Mozzarella cheese

Mix together the ricotta, garlic and pitted olives, and parsley. Stuff chicken breasts with the cheese mixture. Lay chicken breasts in a baking dish and cover with tomato sauce and bake 35 minutes at 350 degrees. Top with Mozzarella and bake until melted. Serve on fettucini or rice.
