TWICE-BAKED POTATOES 
4 med. baking potatoes
2 tbsp. butter
Milk
Salt & pepper
1 (2 oz.) can chopped mushrooms, drained
2 slices American cheese, halved diagonally
Paprika

1. Scrub potatoes thoroughly and use fork tines to prick into the potatoes. Bake in 425 degree oven for 40 to 60 minutes or until done.

2. Cut a lengthwise slice from top of each potato.

3. Discard skin from the slice.

4. Reserving potato shells, scoop out the insides with a spoon and add to potato portions from top slices.

5. Mash potato. Add butter. Beat in enough milk to make a stiff consistency. Season to taste with salt and pepper.

6. Stir in mushrooms.

7. Pile mashed potato mixture into potato shells. Place in 10"x6"x2" baking dish. Return to 425 degree oven and bake for 20 to 25 minutes or until lightly browned.

8. Place cheese atop potatoes; sprinkle with paprika. Bake 2 to 3 minutes longer or until cheese melts. Makes 4 servings.
