This recipe requires a special pan called an aebleskiver pan which is usually found in gourmet shops. It is a Danish pancake. 2 cups buttermilk 2 cups all-purpose flour 3 eggs 1 tsp. baking powder 1/2 tsp. salt 1 tsp. baking soda 2 tsp. sugar melted mixture of 1/2 vegetable shortening and 1/2 butter (for cooking) Beat egg yolks. Add sugar and salt; mix well. Add flour, baking soda and baking powder together. Mix well. Fold in stiffly-beaten egg whites last. Heat an aebleskiver pan over medium to medium-high heat. Add a little of the melted mixture to each hole in the pan. Fill each 2/3 full with batter. Turn as they cook with a potato nail or short skewer, so they form round balls once they are done cooking. These are traditionally served sprinkled with powdered sugar, but we usually add the regular pancake toppings. |
