CHICKEN FINGERS 
Good hot or cold!

enough boneless chicken breasts to feed family or group
Italian flavored bread crumbs (I use Progresso)
5-6 well beaten eggs
1/2 cup milk
corn oil, for frying

Cut away any skin on breasts, discard. Cut up chicken breasts into 1 to 2-inch cubes.

Mix eggs and milk and beat well. Soak cut-up chicken in egg mixture for 15 minutes. After soaking, remove and shake well in a Ziploc bag with bread crumbs.

Fry in hot oil in pan, enough to cover chicken, and turn when browned. I do about 2 minutes each side. Drain on paper towels. Enjoy!
