ANNA'S FISH SWIMMING IN MUSHROOMS | |
12 sm. redfish fillets or 3-5 lg, cut in half 2 tbsp. lemon juice 1 can cream of mushroom soup 1/2 can evaporated milk 1/4 tsp. ground basil 1/4 tsp. ground bay leaves (or 1 sm. leaf) 1/4 stick salt-free butter (or butter, if preferred) 1/2 lb. sliced mushrooms or canned sliced mushrooms 1/4 tsp. Worcestershire sauce Trout, flounder or catfish may be substituted. Place fish in buttered baking dish in 350 degree oven for 8-10 minutes. Turn the fish, turn oven down to 300 degrees, and cook for 5 minutes. SAUCE: Mix the rest of the ingredients in a saucepan and place over a low heat until heated through; do not boil. Pour sauce over fish and bake an additional 5-8 minutes. This is good served with yellow rice on the side. Serves 4-6. |
