GAZPACHO SALAD | |
1 med. tomato, seeded & chopped (1 cup) 1/2 c. cucumber, peeled, seeded, chopped 1/4 c. green pepper, chopped 2 scallions, sliced 2 tbsp. vinegar 1/4 tsp. salt Dash of pepper 1 (4 serving size) pkg. sugar-free Jello gelatin, lemon flavor 3/4 c. boiling water 1/2 c. cold water Ice cubes Combine vegetables, vinegar, salt and pepper; set aside. Dissolve gelatin in boiling water. Combine cold water and ice cubes to make 1 1/4 cups. Add to gelatin, stir until slightly thickened. Remove any unmelted ice. Add vegetable mixture. Chill until thickened, about 5 minutes. Pour into individual dishes. Chill, soft set in 30 minutes. Garnish with vegetables. 6 servings. (16 calories) |
