MEXICANA CORN MICROWAVED 
2 c. fresh corn kernels
1 med. onion, peeled and chopped
3 tbsp. butter
1/2 tsp. salt
1 tbsp. jalapeno peppers or green peppers, chopped
1/4 c. light cream or half and half
1 c. shredded Muenster cheese

Combine corn, onion, butter, salt and peppers in 1 quart covered glass casserole. Cook on High 6 to 8 minutes, stirring once. Stir in cream and cheese; cook on High 1 minute longer. Let stand 5 minutes before serving. Serves 4 to 6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
