ROYAL EGG WHITE ICING 
3 egg whites (at room temperature)
4 cups confectioners' sugar
1/2 tsp. cream of tartar

Beat all ingredients at high speed for 7 to 10 minutes. Use immediately. Reheating will not restore texture so keep icing covered with a damp cloth; for making decorations and flowers that last. It's a smooth hard drying icing.
