EGGLESS SPICE CAKE 
1 1/4 c. flour
1 c. brown sugar
1/4 c. cornstarch
1 tsp. baking soda
1 tsp. allspice
1 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. salt
1/3 c. oil
1 tbsp. vinegar
1 c. water
1/2 c. raisins (optional)

Mix first 8 ingredients together with a fork. Add oil, vinegar and water. Stir quickly, batter will be thin. Add raisins if desired.

Bake in 350°F oven for 30 minutes.

Frosting:

1/4 c. butter, melted
1/2 c. brown sugar
2 tsp. milk
powdered sugar

Mix butter, sugar and milk together. Add enough powdered sugar to thicken. Frost spice cake.

This cake was perfectly light and fluffy. I added one cup of diced prunes instead of the raisins and it was sweet enough to not need frosting. My cake baked perfectly at 30 minutes in a 9x9 pan. I will definitely make this again!
