S.'S CORN FRITTERS 
1 egg
Pinch of salt
1/2 tbsp. olive oil or canola
1/2 c. flour
1/4 tsp. baking powder
1/4 c. milk
3/4 c. corn (frozen or fresh)

Beat the egg yolk, oil, and salt together. Add flour, baking powder, and milk. Beat. Place on ice 2 hours before using. Add white of egg beaten to a stiff froth last; then add corn. Fry in canola oil.
