ADAM'S JALAPENO CORN DOG BATTER 
A sweet and snappy jalapeno corn dog batter!

1 lb. pkg. quality franks or hot links
as many skewer sticks as needed (1 per corn dog)

CORN DOG BATTER:

2 eggs, beaten
1 cup canned milk (unsweetened)
1 cup whole wheat flour
1 cup yellow cornmeal
3 cleaned and grated large fresh jalapenos (finely chopped is OK)
2 tsp. crushed red pepper
2 tsp. onion powder
1/2 tsp. cracked black pepper
1/2 tsp. sea salt
1 tsp. baking powder
3 tbsp. dark brown sugar

Mix together all ingredients. Insert sticks in room temperature dry franks or links. Dip wieners in the batter and fry in hot oil (350 to 375°F) until brown...

Cooks Tip: Putting batter in a tall glass makes it easy to dip franks... Leftover batter makes tasty fritters...

Variation: Grated sharp cheddar cheese can be added to this recipe for really great jalapeno and cheese fritters.
