CORN FRITTERS 
3 eggs, separated
1/2 tsp. salt
1/8 tsp. pepper
2 tbsp. flour
Melted shortening to cover bottom of pan
2 c. grated fresh or canned whole kernel corn
2 tsp. sugar

Beat egg whites until stiff, but not dry. Mix rest of ingredients except shortening, and fold into beaten whites. Drop by tablespoonfuls into hot shortening, and cook on both sides until brown. Serve at once. Serves 4-6 people
