CORN FRITTERS 
6 ears raw corn (med. old, mature ears, not really young ears)

Split kernels and scrape out pulp with back of knife. Do not cut off kernels. Add one egg to pulp, then add 1/4 cup flour (little more if ears are large), 1/4 teaspoon baking powder and 1 pinch salt. Beat all together and fry in butter, making fritters about 2 1/2 inches in size.
