HOT GERMAN POTATO SALAD
(Microwave)
 
4 med. potatoes

Wash and pierce potatoes through with fork. Place on paper towel in microwave. Micro on High 120-12 minutes, turning over and rearranging after 4 minutes or until tender. Remove from oven. Cool slightly. Peel potatoes and cut into slices to make about 4 cups.

Micro about 6-10 minutes on High. Save bacon fat.

To bacon fat add the following: 1/4 c. sugar 1 1/2 tsp. salt 1/2 tsp. celery seed 1/8 tsp. pepper

Micro in 2 quart casserole on High 1-2 minutes until bubbly, stirring after 1 minute.

Add to above mixture: 1/2 c. vinegar

Micro on High 4 minutes until mixture boils and thickens, stirring after 1 minute. Remove from oven and stir until smooth. Add potatoes and crumbled up bacon; stir gently so potatoes hold their shape. Cover casserole and let stand until ready to serve. Best served hot! Great for summer picnics!

Since microwave ovens vary in power, you may need to adjust your cooking time.
