MY DAD'S FRIED CHICKEN 
2 1/2 to 3 lbs. chicken
Flour, salt and pepper to taste
1 1/2 to 2 c. Crisco oil

Roll chicken in flour. Salt and pepper to your taste. Heat oil in large iron skillet and add chicken. Put lid on skillet and brown at medium low flame. You can't fry chicken too fast or it won't be done in the middle. When chicken has browned, turn and let brown on other side. Then put browned pieces on top and brown the rest. Drain on paper towels. Dad showed me how to fry chicken at the age of 12 years.
