JE'S FROSTED PUMPKIN BROWNIES | |
1 cup vegetable oil (Crisco) 2 cups brown light sugar (slightly packed) 3 eggs 1 (15 oz.) can pure pumpkin 2 1/2 cups all-purpose flour 2 tsp. baking powder 2 tsp. cinnamon 1/4 tsp. ginger 1/4 tsp. clove 1/4 tsp nutmeg 1/4 tsp. salt 3/4 cup chopped walnuts or pecans (optional) 3/4 cup chocolate chips (optional) Mix oil and sugar, add eggs and pumpkin. Mix well until light and fluffy. Mix all of your dry ingredients in a separate bowl. Add to sugar mixture, mix thoroughly. Line a 15x10x1-inch pan with parchment paper. Do not grease. Bake at 350°F for 25 to 30 minutes. Cool. ICING: 1 (8 oz.) pkg. cream cheese, softened 1 cup (2 sticks) butter 2 tsp. vanilla 1 (1 lb.) box confectioners' sugar Cream together cream cheese, butter, vanilla and confectioners' sugar.
