QUICK AND EASY CARAMEL 
1 c. butter
2 1/4 c. packed brown sugar (16 oz.)
1 1/4 c. sweetened condensed milk (14 oz.)
1 c. light corn syrup
1 tsp. vanilla

Line a 9" square baking pan with foil; butter the foil. In a heavy 3 quart saucepan, melt the butter. Then add the brown sugar, condensed milk and corn syrup. Bring to a boil, stirring often. Reduce heat to medium. Using a candy thermometer heat to 248 degrees (hard ball stage). Remove from heat, stir in vanilla. Immediately pour into foil lined pan. When this hardens remove from pan by using foil lining. Cut into 1" pieces. Wrap each piece in clear plastic wrap. Makes about 81 pieces, or 2 3/4 pounds.
