TEXAS CREAM PIE 
2 eggs, separated
2 c. sweet milk (canned okay)
2 tbsp. flour (heaping)
2 tbsp. cornstarch
2/3 c. sugar in batter
1/3 c. sugar in egg whites
1 tbsp. butter
Pinch of salt
Vanilla
1 sq. bitter chocolate, grated
Baked pie shell
Whipped cream

Beat egg yolks lightly. Add milk. Mix flour, cornstarch and 2/3 cup sugar. Add to milk with butter. Cook in double boiler until thick; very thick! Stir constantly. Beat egg whites with 1/3 cup sugar and salt until stiff. Add vanilla to cooked mixture. Pour over egg whites, beating constantly. Pour mixture into baked pie shell. Cool. Top with whipped cream and grated chocolate.
